How to make Herbal Lollipops


Want to know how to make Herbal Lollipops?


Herbal lollipops are not only delicious, but beautiful and make wonderful gifts.

You will need:

A 4 quart saucepan

Candy thermometer

Silicone lollipop molds enough for approximately 30 lollipops depending on size of molds

Stainless steel baster (optional)

Lollipop sticks

3x4 treat bags

Twist ties


Ingredients:

1 cup fresh organic ginger root

1 tablespoon of organic cinnamon chips or one cinnamon stick

2 cups filtered water

2 cups organic cane sugar

1/2 tsp organic cream of tartar


Simmer ginger and cinnamon in filtered water for 30 minutes. During this time you can prepare your molds with lollipop sticks.

Strain out cinnamon and ginger and return cinnamon, ginger water to saucepan. Add sugar and cream of tartar, stir only until sugar is incorporated. You will not stir again during the cooking process.


Simmer on medium high heat until candy thermometer reads 300• F, (hard crack). This takes about 30 minutes. You might find yourself lifting and setting back down the pan over the burner until it comes to a hard enough boil it will no longer boil over. You can drop some of your candy into a cup of cold water to verify you have reached the hard crack stage. Do not walk away from your candy! It will steam throughout the cooking process, however if it starts to smoke you will want to adjust the temperature of the stovetop accordingly. The temperature this can occur is typically between 275 and 300• F. From experience, burning you’re candy after all that hard work is frustrating.


Pour into molds or use a stainless steel baster for a easier transfer to the molds.

Truth be told I was not overly excited about the silicone lollipop molds I found, so I used a mold I liked and a drill bit to make a hole for the lollipop sticks.

Allow to cool for about 30 minutes, wrap and store in a cool dry place.
